I do it all the time. I love to get the bags of frozen chicken, because they are CHEAP. I get them on sale for $5.99 and sometimes have a coupon for even more off. I used frozen chicken tenderloins in the images above. No, I did not thaw the chicken first. I threw it in there frozen. Why? Because I’m lazy and cheap.
What if I’m gone longer than six hours?

Take Two – How to Use Slow Cooker Chicken Recipe
What I really love about this particular easy slow cooker chicken recipe is that you can turn it into multiple meals. We actually got three meals out of this one batch.
- The first night, we ate the chicken provencal with a bit of cheese on top.
- The second night, we shredded up the leftover crock pot chicken provencal and served it on flour tortillas, adding a wedge of lime, some sour cream and more cheese. Basically, we had fancy chicken tacos.

Easy and Comforting Chicken Provencal Crock Pot Recipe

This warm comfort food is the perfect chicken stew for the slow cooker. This dish is perfect for cooler weather!
- 3 pounds chicken tenderloins
- 1/2 red onion
- 1 green pepper
- 1 can diced tomatoes
- 1 teaspoon salt
- 1 teaspoon pepper
- 1 tablespoon olive oil
- 1/2 packet ranch dressing mix - dry
- 1/2 teaspoon cumin
Add olive oil to crock and coat the inside thoroughly.
Add chicken to crock pot.
Add dry ingredients (salt, pepper, cumin and ranch dressing mix).
Slice red onion and green pepper and throw into crock pot.
Pour can of diced tomatoes on top.
Set slow cooker to low and cook for about six hours, stirring halfway through if possible.
Top chicken stew with cheese and sour cream.
- Add corn or tortilla chips for added flavor and crunch.
- Save leftovers for a second meal (see alternatives above).
