Lemons and summer go hand in hand. I don’t know about you, but I love the tartness of lemons. Whether it is a twist of lemon in a glass of ice water or just about any lemon flavored dessert, count me in.
Crabby Housewife’s husband does not like lemons. This was not something that came up in the three years we dated before getting married. I have no idea why. So, when it came time for me to choose raspberry or lemon filling for our wedding cake, guess what I chose. Yep, the one he hates.
The day of our wedding, we cut the cake, fed each other a bite and he got the strangest look on his face. He hates lemon. Like a trooper, he ate that bite anyway, though.
Still, I love lemons and with that in mind, I went and gathered up some of my favorite online recipes to share with you.
Lemon Blueberry Bars
These lemon blueberry bars are pretty simple to make and combine two different tastes of summer that make them perfect for a summer picnic, to finish off a night of grilling or to take to a family gathering. This blog has several other dessert bar recipes you’ll want to check out as well.
Lemon Pudding Cake
This homemade lemon pudding cake recipe is moist with a creamy icing. If you like a light, refreshing cake, try this one. Karlynn Johnson was inspired to make this cake after creating a pistachio pudding cake. You’ll use easy to find ingredients, such as butter, sugar, eggs, vanilla and flour.
Lemon Icebox Pie
Rock Recipes has a very simple recipe for lemon icebox pie that will help you avoid heating up your oven this summer. You will need to bake the crust for about 10 minutes, but you can do that early in the morning or even prepare ahead of time during cooler parts of the day.
Cherry Lemonade Bars
My good friend and fellow blogger Marye Audet is an amazing cook. There are many times I turn to her to ask questions about a recipe or to try out something on her blog, Restless Chipotle. This recipe for cherry lemonade bars is one of the best and most unique recipes I’ve seen in forever. You definitely want to give these a try.
Lemon Cake Roll
Dorothy over at Crazy for crust has an amazing lemon cake roll recipe. It’s similar to a lemon Twinkie and is much easier to make than you’d suspect but makes an impressive treat for family and guests.
Frozen Lemon Mousse
Martha Stewart has an amazing recipe for frozen lemon mousse. This recipe is the perfect refreshing treat on a steaming hot summer day. While it does require a bit of prep work, you’ll wind up with an impressive, delicious treat.
For the tastiest lemon treats, start with the freshest ingredients possible. Not only will you often save money baking from scratch, but you’ll notice a huge difference in the final result.
