How to Make the Perfect Hard Boiled Eggs – How Long to Hard Boil an Egg

How long do you cook a hard-boiled egg? 12 minutes is the simple answer, but the process is a lot more involved. It sounds like an easy thing to make, a hard-boiled egg, but knowing how long to hard boil an egg can be challenging. If your eggs are rubbery, runny in the middle, or hard to peel, then you can use these tips that will help you boil the perfect hard-boiled egg.

As a mom, I have cooked untold numbers of hard-boiled eggs over the years. The best way to learn how to cook the perfect egg is trial and error. However, hopefully I can help you cook a hard boiled egg easily with these tips.

Tip # 1: How Long to Cook a Hard Boiled Egg

As I mentioned before, there is a lot more to cooking the perfect hard boiled egg than just throwing an egg in a pot of water and boiling it.

  • Place your eggs in the bottom of a sauce pan. You don’t want the eggs too crowded and a single layer works best. If you need to boil more eggs, invest in a larger pot or cook them in batches for the best results.
  • Cover the eggs with tap water (just tap temperature is best).
  • Place the pot of eggs covered in water on your stove top and set the burner to high heat. Bring the pot to a hard boil.
  • Add 1/2 teaspoon of salt to a small pot or 1 teaspoon to a large one. This will make the eggs easier to peel. I don’t know why, just do it because mom says.
  • Once you’ve added the salt, turn the burner off but leave the pot on that hot burner. If you own a convection stovetop, put it on the lowest heat possible.
  • Leave there for 12 minutes. You can leave them a bit longer if you are cooking or preparing other things. I’ve left them on the burner for up to 18 minutes with no problem.

Tip # 2: How to Cool the Hard-Boiled Eggs

It is just as important how you cool the eggs as how you cook them. Once the time is up, drain off the hot water and run cold water over the eggs. Drain, add more cold water. Now, add about 10-12 ice cubes (double if using a large pot) and let sit for five minutes. This will cool the eggs so you can peel them. If the ice cubes melt and you aren’t quite ready to peel, add a few more ice cubes, but don’t wait too long to peel the eggs.

Tip # 3: When to Peel Boiled Eggs

I get the best results when I peel them as soon as they have cooled. If you let them sit too long, the shells tend to stick to the egg and create an ugly, pitted surface instead of a smooth, pretty hard-boiled egg. If you are making deviled eggs, for example, then this is important. If you’re just cutting the eggs up to put them in a salad, then it might not matter.

See? Hard-boiled eggs really are pretty simple to make once you know how long to boil the eggs and how to go about cooling and peeling them.

Review Blue Apron Meal Delivery Service

For a while now, I’ve been wanting to review Blue Apron meal delivery service. First, I love to try out new recipes; and second, the idea of not being so wasteful with our food is very appealing to me. I plan to try out some of the other meal delivery services as well, but Groupon had a deal on Blue Apron, and you know how I love a good deal.

The process was pretty easy. Once I had my Groupon voucher, I simply went to a special page on the Blue Apron website (the link was provided within the Groupon), typed in my code and got started. Be aware that you are essentially signing up for a weekly membership, so you will either need to skip future meals you don’t want or cancel the account after you receive your first delivery. Otherwise, they will send you more meals at full price and you’ll be charged for them. 

I decided to wait until I’d tried the program before I cancelled my account, but with the holidays and vacations, etc., I did decide to skip meals for the next 6 to 8 weeks. I’ll make a decision after that if I want to have another delivery here and there. Honestly, at full price, the meals are a bit pricier than what I would cook for us. Then, again, it is still cheaper than eating out, tipping the waitress, etc. I would also say it is probably healthier based on the ingredients.

Cooking for Two

My husband and I are officially empty nesters. My oldest has her first job after college and her first place of her own. My youngest is in college and staying just off campus in some student apartments. I have had to really adjust how I cook meals, we’ve had to learn to eat leftovers, etc. You would think I would remember from our early days of marriage, but for the past 23 years, there have been kiddos in the picture.

Groupon was sold out of the 2-person meal kits. I went ahead and ordered the 4-person meal kit because I figured my husband would have leftovers for lunch or we could eat the same meal two nights. Not a big deal or a deal breaker. More on the size of the 4-person kit in a minute below in the review chart at the end of this post.

Review Blue Apron Kit I Received

The box was a good size to pick up and carry into the house. Not overwhelming.

The week I signed up, the kit included a recipe for Seared Chicken Thighs and White Cheddar Cheeseburgers. You can actually view the recipes if you want to see the quality of the ingredients. You can also make some other choices, such as if you want fish, have allergies, etc. 

I spent some time looking through the different kits for upcoming weeks and found them impressive. You can choose your delivery day and you can choose to add a wine pairing should you desire (for an additional fee).

Blue Apron Delivery

I was pretty impressed with the delivery. The box arrived well in time for dinner on a Friday. I wasn’t planning to use the meals until later, but had I wanted to use them that night, I would have had them in time. The box was a good size to pick up and carry in the house. It was a bit heavy as everything perishable is packed in ice, but not so heavy I couldn’t carry it.

When I opened the box, there were recipe cards on top. I liked this because they weren’t had to find or under all the food where they might get stained should something leak (nothing was leaking, of course, but my mind always thinks it might).

In the image here, you see the front of the recipe card. It lists the ingredients (these are all already divided into neat packages inside the box. On the back of the card, however, is a list of steps you need to take to prepare this meal. They were pretty straightforward and would work great for a beginning cook. However, as someone who has cooked since I was 12, I did find that it made sense to skip around on some things and do them in the order that made the most sense to me. 

The directions were very easy to follow and when the meal was done, as you can see from the photo at the top of this page, the food looked almost exactly like it did on the recipe card they sent to me. I love it when food is pretty and tastes good, so to me this was a big bonus.

Inside the Box

Once I unwrapped the covering, I found that the produce and things that don’t necessarily have to be kept cold were right on top. I pulled these out and set them aside. One thing I really liked was that the seasonings and dressings and such were in a little brown bag that was clearly labeled as to which meal it was for. This made it so easy for me to just grab the ingredients I needed for this meal. 

There was also a thick piece of cardboard separating the produce/bread/seasonings from the meat and refrigerated items and the ice keeping them cold.

This was smart because if the bread froze it wouldn’t have tasted as fresh.

Cold Items

Under the cardboard were the cold items. 

  • Milk
  • Ground beef
  • Chicken
  • Cheese

You get the idea. Basically, anything you would put in your fridge, went into this portion. These items were completely surround by ice blocks. There are two in the picture to the right, but there were more than this in the box and they did an amazing job of keeping the items cold and fresh.

I have to say that I am extremely impressed overall with Blue Apron’s delivery method and packaging. I love that they sent just enough to make these dishes without any wasted food. 

Ease of Cooking and Taste Review

The dish was a little more involved than what I would normally make. There was a bit of prep work. It took me a total of about 30-45 minutes to make this meal. That is fine a couple of times a week and I truly did enjoy the creativeness of trying something new and wondering how it would turn out.

Adjustments to Cooking

As I mentioned before, I did make some adjustments to the order of things. For example, the directions said to prepare the cheese sauce and then start the hamburgers cooking, but I knew from experience those hamburgers would take longer to cook on my grill pan than they were saying, so I started them first and then cooked the cheese sauce while they browned slowly.

It was not hard to put this meal together and the directions were clear enough that even a beginner would have been successful.

Taste of Blue Apron Foods

I thought this meal tasted really good. The Dijon mustard mixed with white cheddar cheese created a unique taste that made this a restaurant quality meal.

I was a little concerned when they said to only salt and pepper the ground beef and then form patties and cook it. Was that really all they wanted me to do? I usually add some egg, some seasoning, etc. But, I have to say that the quality of the beef must have been really good because the burgers turned out tender and full of taste. Impressive.

Again, I always adapt everything. They recommended adding a bit of olive oil before cooking the burgers. Yuck. I don’t particularly like the taste of olive oil. I used grass fed butter I had on hand instead. I just subbed same amounts. I think this added to the flavor. In fact, Blue Apron should change the recipe to allow for this. So much tastier in my opinion.

There is a pretty good selection of meal choices. You can choose between four options. I wasn’t extremely into the choices on the week I signed up for. I’d like to see more of a choices for picky eaters or those with allergies, but that possibly isn’t cost effective for the company.

The meal I prepared was delicious. It had a unique taste that reminded me of a restaurant quality, gourmet burger. I was not crazy over the sweet potatoes, but that was me. I don’t like them much. As far as sweet potatoes go, they were fine.

The cost was reasonable, even without my Groupon. Even though it isn’t cheap (about $69.92), you will have some leftovers and probably spend less than you would eating out. It might be worth it to you if you work a lot, are busy with kids, etc. You also do not have to use it every week but can skip weeks to reduce the cost of the convenience a bit more.

This is the only area where I had a real beef with Blue Apron (get it? beef? he he). Since Groupon was out of the meals for 2, I got the meal for 4. This seemed like a great idea as I could have enough for two dinners or lunch for both of us the next day. It was four burgers. My husband eats two for dinner. I would estimate that unless you have a family with very small children and light eaters that this meal will only feed three at most. When you take the cost into account, that was a little concerning. To be fair, though, I’ve not yet tried the chicken dish, so that one might have more leftovers. But, chicken thighs are a pretty cheap food to buy on sale, so you have to decide if the service is worth it to you.
Other   You will need a few pantry staples, such as salt, pepper, olive oil, etc. You should already have them on hand but check the recipe sheet to be sure before you start cooking.

My final thoughts? If you want to eat out less, eat healthier and not have to think about what to cook a couple of days a week, then this is a great solution for you. It is fairly cost effective, especially if you can get in on a deal such as I did. You won’t have to make a trip to the store, which is another convenience and because things are prepackaged and portioned out, you won’t have to do much measuring.

As of December 2016, you can still get a Blue Apron Groupon at a discount. You’ll get about $20 off. Go through Ebates to save an additional six percent (or whatever current rate is). I don’t know if it will still work, because they will likely close this loophole, but I then went to Blue Apron with my Groupon, activated my eBates add-on, and saved an additional $7.50 in rebates.

If you have turkey leftovers after your Thanksgiving feast, you may be wondering about some additional easy leftover recipes. Me too! I really don’t like just plain reheated turkey. Y’all know those turkey leftovers do not taste the same the next day! But, I don’t want to waste all those turkey leftovers. 

This year, I decided to make a turkey leftovers easy pot pie. This recipe was pretty fast to throw together, used up a lot of the leftovers I had, and was ready in about 30 minutes. It was warm, filling, and delicious. You likely already have the ingredients on hand, too! I had turkey and potatoes left from our meal. I always have frozen mixed veggies in my freezer. I also always have cream of chicken and cream of mushroom soup. 

Use Turkey Leftovers for a Fast Pot Pie

Ingredients
  • Leftover turkey about 1/2 cup to a cup shredded - can mix light and dark
  • 1 can cream of chicken soup
  • 1 can cream of mushroom soup
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt
  • 3 Tablespoons heavy whipping cream can use milk if you don't have HWC
  • 1 diced and boiled potato
  • 1/2 bag frozen mixed vegetables
  • 1 package prepared refrigerated pie crusts
Instructions
  1. Preheat oven to 400 degrees Fahrenheit (yes the box for pie crust will say 425, but ignore this).
  2. Lay out pie crusts so they come to room temperature.
  3. Shred leftover turkey.
  4. In a medium bowl, add the cans of cream soup.
  5. Add heavy whipping cream and stir until mixed thoroughly.
  6. Stir in salt and pepper.
  7. Fold in potatoes and frozen mixed vegetables.
  8. Lay one pie crust into about a 9" pie pan, pressing into the bottom. Trim to the edge of pie plate.
  9. Layer in the mixed filling.
  10. Roll the second pie crust across the top of the pie plate and punch extra crust on edges to create a scalloped edge.
  11. Cut six slits in the top of the crust for steam to vent.
  12. Bake in oven for 20 minutes.
  13. Pull the pie out and put edge guards or aluminum foil around the edges and place back in oven for 10 more minutes or until crust is golden brown.
  14. Allow to cool for 10 minutes after you take out of the oven, cut and serve.

I hope you all had an absolutely wonderful Thanksgiving. This turkey pot pie is so delicious and easy to make and it gives you another way to enjoy those leftovers without getting sick and tired of turkey too soon. Gobble gobble!

The ClickList Female Revolution

Have you tried Kroger’s new ClickList service? Basically, you choose items online, choose a pickup time, and pull into a bay to pick up your groceries. They load them in your car and you’re on your way. It typically takes 5-10 minutes as opposed to almost an hour in the store. Recently, though, I’ve started to notice something strange when I go to pick up our groceries.

Even though we live in a time period where women are considered equal to men, in many families there are still very specific roles that are played. I’m not saying there is anything wrong with this. In fact, I think that God made men and women very different and most women enjoy the nurturing involved in cooking and caring for their families. However, the interior of the home has been the domain of many women and some of us work, volunteer, and are overwhelmed. A little help here and there is a wonderful thing and most men are happy to help their wives if they know what to do.

Ladies, have you ever sent your husband to the store with a list and he comes home and informs you they were out of cream cheese but he went ahead and got you sour cream instead? (insert any inappropriate food and substitute here). I love my husband dearly, but I have literally given him directions with the brand name, color of the package and where it is located in the store and he has still come home with something different. Enter ClickList.

Now, wives can do the shopping, ensuring they get the exact items and sale prices they want and hubby can pull through the store on his way home from work. So, the last couple of weeks when I have arrived at the store, there have been other cars there, too. There are men in those cars, which is unusual. If you do most of the shopping for your household, you are aware that when you go into the store, there are about 75% women. Sometimes you will see couples shopping together. Rarely, you will see man shopping alone. Maybe it is the time of day I go to the store, but this has held true in my experience.

While I have been over here singing the praises of ClickList (have I mentioned I LOVE this service?), it never occurred to me that I could send my husband to pick up the groceries for me (sorry, Scott, your time is coming). This means if I am swamped with work, not feeling well, or just don’t feel like it, I can now send him to the store and be assured I’ll get the items I need.

I have often wondered over the years if men bring home the wrong items intentionally. I mean, what better way to get out of shopping without a fight because you refuse to do it? Maybe it is my passive aggressive personality that sees this as a real possibility. If that is what some men are doing, then ClickList removes their ability to commit that passive aggressive act and forces them to help.

Cinnamon Raisin French Toast

Cinnamon Raisin French Toast

Recently, we went to Huber’s Winery and Orchards and visited their little marketplace there and had some fresh homemade ice cream. We wound up buying a loaf of cinnamon raisin bread, because my husband loves it and I decided to make him some cinnamon raisin French toast on the recommendation of the lady working there (he also loves French toast). 

I didn’t eat any of this, but he gave it rave reviews. It smelled heavenly. If you don’t live anywhere near Huber’s, you can purchase any loaf of cinnamon bread. The one I purchased had a drizzle of icing and was very thick with minimal raisins and cinnamon swirls. I sliced it into about 1-inch thick slices.

Cinnamon Raisin French Toast
This recipe serves 2. If you want to make more, just double the recipe. If you go beyond that, you may want to mix in two batches as the taste can be off in bigger batches than for 4. A loaf of bread should serve 6-8 people easily. We had a ton left over, which my hubby has happily munched on all week.

Ingredients
  • 1 Tablespoon white granulated sugar
  • 1/8 teaspoon nutmeg
  • 1/2 teaspoon cinnamon yes, more cinnamon!
  • 2 eggs
  • Dash of vanilla extract
  • 1/8 cup milk
  • 2 pats of butter
  • Cinnamon raisin bread
  • Powdered sugar optional
  • Syrup flavor of choice
  • 2 Tablespoons chopped pecans optional
Instructions
  1. In a shallow pie dish...
  2. Mix together dry ingredients (sugar, and spices)
  3. Add milk
  4. Whisk in eggs
  5. Add vanilla extract and stir
  6. Cut bread into thick slices. Lay in egg mixture for 30 seconds on each side.
  7. Melt butter and slowly warm frying pan on medium heat. Continue to drench bread slices in egg mixture while you wait for pan to heat.
  8. Cook approximately 5 minutes on each side, but you'll want to slightly lift after a few minutes and check to see if the toast is browning. A light golden brown color is what you're going for. Ideally, the outside will be crispy and the inside ooey, gooey.
  9. Place finished bread on plate and sprinkle with powdered sugar.
  10. Top with syrup of your choice. We used maple.
  11. Scatter chopped pecans over entire concoction.
  12. Try not to eat too fast, but it will be a challenge 🙂
