Lite Yogurt Rainbow Fruit Popsicles

  • 1 cup each raspberries mango and kiwi
  • 3 cups vanilla yogurt tip, choose light to cut fat or low sugar to cut carbs
  • 1/3 cup sugar or sugar substitute that equals sugar in measuring such as Splenda
  • Popsicle molds
  1. In a blender, mix 1 cup of yogurt and 1 cup of the fruit you want for the top of your popsicle. The berries should be completely blended for a smooth popsicle or left slightly chunky for a chunky fruit feel.
  2. Layer into the mold about 1/3 up.
  3. Mix another cup of yogurt with your second choice of fruit. Pour into the molds, leaving about 1/3 empty for your final flavor.
  4. Mix the final fruit flavor that will go on the bottom of your popsicles. Pour to top of mold.
  5. Freeze for 6 hours and enjoy a delicious, healthy and refreshing summer treat.
